I also main(ed) support, usually on EUW with team, but am playing ADC as much as I can for my NA solo queue. I have the same problem you had not feeling confident in the role since I am much better at support.
I mainly play Graves and Lucian... lane killers / strong mid game champs. I suck at CS'ing. Even though I pay attention to it each game since I know I'm bad it I don't seem to be getting much better. D:
I was wondering since you main Caitlyn, who do you hate to play against most? Whenever the enemy team picks Cait I groan, because Graves and Lucian aren't very good against her and I don't ever know what to play. Others I can play fine are Ezreal, MF, and Tristana. Any suggestions for playing against her?

Currently no ADC stands up against
Caitlyn in lane.
Varus maxing Q is propably the best choice. From your champion pool,
I'd say try
Ezreal with poke support like
Sona, if the support
is willing to communicate.
Tristana is also fine, because of her
E max, which allows to control lane a bit and wins AA trades or at least
goes even (assuming Q doesn't land from Cait)
Myself I tend to go for
Vayne or
Tristana. Neither of them can
stand a chance and csing is really hard, but I invest in late-game and
to level 6. I usually fall behind ~20-30 in cs, but in 6 I turn the game.
Strong level 6 and sustain in lane is really good.
As
Caitlyn; I don't feel comfortable playing against huge poke, aggressive jungler or
Blitzcrank. Don't really mind which ADC I'm up against.
When I play Cait, I go shove minions to tower 24/7 and poke under the tower. The threat
is if they have
Blitzcrank who can punish for it. This also means big threat from
enemy jungler.
Some may or may not agree with this. I've had success by playing
Caitlyn this way
and I'll continue doing so in the future. This worked especially well in silver/low-ish gold.
People just can't cs under tower and fall half of my cs behind. I could screenshot
the cs difference sometime.

Thanks for the advice! Yeah that is mostly how I see Cait playing to be effective (while also abusing range to poke / kill under tower). 3 traps under tower are the worst. :(

Again only 190 cs. I just can't keep up with mid lane, sometimes top also.
I know how and I deny lots of cs from enemy ADC, but I can't keep up with
it myself. - I'm happy as long as I have plenty more cs than opposite lane however.
