Also, I've been in bed all day experiencing varying levels of pain and the new players in my Pathfinder game won't stop calling me "she" despite me being proactive and pinning a post on the discord chat stating that I use and want everyone else to use male pronouns in reference to me. It's really not what I needed right now and I feel like asserting myself might drive people off. I suppose if they're willing to leave over that, they're not worth playing with, but still.

One serious questions though, I have accidently misgendered a transgendered person in the past (I knew he was transgender but my brain decided to tell me to **** off). In those times do you think it's better to ignore it and force myself into saying things correctly after or should I still apologize in the moment?

It varies from person to person. Personally, I'm just fine whether someone corrects themselves in the moment or just moves on and tries not to do it in the future, but some people might want something different. Speaking for myself, I find the whole thing internally distressing enough as is, so I really don't want someone to dwell on it or make the painful moment last any longer than it has to.
