Just a note on the unstable jungling
He is low most of the time and really prone to being ganked, but if your smart and know your opponent jungler's route your fine. I like him because he can jungle faster than anyone else I use without "wasted items" That is I can use no potions, and no items that wouldn't use if I laned him, i.e. any madreds.
My route is little golem w/smite, wraith, wolf, big golem w/ smite then I cross the river, if the little golem is gone I wait for enemy jungler to intiate red and smite steal kill them. if not I do little golems, red buff, wraith, then back into my jungle wolf, wraith, my red, little golem, across the river for blue then wolf.
both jungles cleared with no trips back. I hit lvl 6 sometimes before mid does sometimes just after, no wasted time or money. It's just too good to pass up. That is with a 21/0/9 build armor pen red/mp regen5 yellow/mpregen flat blue/armor quints. only one faster one I've used is rammus, but he is always banned

I find that Olaf is even more effective if he can steal HP while having high AS. It means he can survive longer in fights, and thus, kill/carry harder.
So as it drops lower from enemy retaliation, his HP drops slowly, as he melts down his enemy. And it synergizes with Wriggles and Vicious strikes, it doesn't make Starks obsolete.
It also works wonders on turrets.
Olaf is my least favorite champion because even a Tryndamere can be stunned.
If an good Olaf wants to kill you, and you're got a full-hp hard core tank, he CAN get you and you won't get away.
Wriggles -> sometimes I see Warmogs -> Frozen Mallet -> Stark's -> THEN Atma's Ghosts towards you + Ult past team's CC as his allies distract. Your hp down bom, boom, booom, gone.
