It really helps that you're good at them too. This works until your skill level = your elo.
Or pick a high skill cap, high-reward champion like
Lee Sin or
Zed, and practice them day in-out. This is harder to do because you won't always get to play them, but if you master a high reward champion it'll take you far.

So, anyway, despite the low chances of getting decent team mates, how are you guys still able to pull through? Defy the odds?
If you are a good player, the odds are in your favor. If your teammates always suck every game, then your enemies will suck most of the time too. Improve your mechanics and make the biggest impact you can in every game. If you are significantly better than the competition, then all you need is one or two people on your team to be more competent than the enemy team and you should win.
Imagine how easy it would be to climb if, without fail, your mid laner went 5/0 in laning phase every single game. Now be that mid laner and give your team a strong chance of winning right out of the gate every game. The fewer mistakes and the more plays you make in each game, the higher your chances of climbing out of whatever elo you're in. That's basically how low elo works.
High elo isn't much different except both teams are usually pretty competent and you can help them carry you rather than needing to make most of the plays yourself.

Thanks to Fatelblade for the sig!
