Have you seen Little Witch Academia?
Haven't seen it myself, but after a shining recommendation from Demo-sama it is looking pretty enticing.

Oh, and for magical (girl) anime, then Magical Witch Punie-chan. It's got this semi-dark humour thing going on. It's only four episodes if memory serves though.

Also, I don't specifically want magical girl anime... I'm more for the modern day magic 8)
I'll check that little witch academia short out, and might even watch punie although I didn't particularly enjoy Dokuro - chan :P

It's different to Dokuro. A lot less blood to say the least.
Okay so I watched Little Witch Academia.
My gripes about it:
-It gets a little TOO silly
-There is no real explanation behind the magic system... yet
-It's very similar in feeling to the Magnostadt arc of Magi: The kindoms of magic but is very lackluster in comparison :<
-The animation isn't exactly the best thing out there
It was quite enjoyable though. First episode gets an 8/10 from me with a lot of potential to improve :3

This one?That flower does look very interesting. But I cannot for the life of me understand why they're licking it. To see the reaction of saliva on the stamen? But for that they'd need a much more controlled environment. Doing it that way doesn't seem like it would pass any kind of peer review..

Winx Club is an alright anime, but it's seriously got nothing on Tinkerbell. Tinkerbell is by far the best magic anime you'll ever watch.
Since you really like Cowboy Bebop, give Samurai Champloo a shot. Same producers so they both have the really unique feel to it. Both are really awesome.
