He works so perfectly with a Manamune+Metagolem build so I don't see why you'd wanna theory craft on it.

I actually really like experimenting on Yorick.
Void Staff isn't half bad (amazingly). His W scales 1:1 with AP and his W and E both deal magic damage.
SV is OK
Chalice is OK
Metagolem works fine on him, but, it's more interesting to do other stuff =P
Oooh, thinking about it, gunblade might be pretty good.
IDK, I think AP is ok with him as long as it isn't your main goal.
Rylai's might be good too, makes all your main spells slow (actually, maybe not Q, idk)

I have to say that an HP heavy build is the way to go. I play him as a bulky AD, and its always fun.
I dont Atmog's but I still do pretty well. MM, CDR Boots, FM, BV, SFC, and Atma's. And if my team is a lil low on dmg output, I take Trinity over the SFC.

Logic; I think Yorick's ult is his main strength, and otherwise he's just annoying in team fights, and a guy who wins lane phase in top lane. I suspect he'd help win lanes in bot lane, be every bit as annoying, not need any farm, and you'd still have utility in a support via slows, and a Yorick ult.

I have tried support Yorick bottom and it works very well. It counters most bottom lanes very hard. Yorick basically takes all the damage, heals himself, and grants his AD carry free farm. His slow is a very effective tool to secure skill shots. His mid range control is simply insane. He can tank dragon like a boss and jungle ganks are nothing to fear.

I suspect Yorick is secretly a support champion and people will find more succes when he is played as one than they feel when they solo top with him.

Manamune + Atma's + Triforce + BV?
I thought about combining the two things and it didn't work horribly badly, so, how viable is that? Probably I would go MM + Triforce, and then depending on what I want Atma's or BV.
Also, Chalice on Yorick instead of MM?
As a joke build I thought about just taking Chalice and then stacking AD, or going Atmog's + SV + FoN or something like that.
