As i am trying to get better at Yasuo, i would like to know how to be able to change my item pick late game based on laning vs different opponents such as AP, AD or tank?
Since Yasuo's crit chance, due to Way of the Wanderer, is passively doubled allowing him to build tons of damage instead of stacking crit. That being said, with this build, he actually has technically over 100% critical strike chance by getting 30% from Shiv, 20% from IE (this is already 100% critical strike chance), and 20% from Trinity Force.
Steel Tempest gains cooldown reduction, up to 66%, based on how much bonus attack speed Yasuo has. Statikk Shiv and Trinity Force give him attack speed and critical strike chance giving his Q lots of CDR allowing him to cast it pretty much every second. Trinity also gives him 10% CDR, which really isn't that great but is actually quite noticeable.
The whole reason behind getting Trinity Force is because of it's spellblade proc and rage passive giving him 2 times more damage from his Q than normal allowing him to reach higher damage peaks, and also giving him insane movement speed for hitting something with his Q. Once he gets Bloodthirster, Steel Tempest will heal him for a staggering amount of his HP pool.
These runes are quite solid since they provide decent stats all around, specifically the offensive ones which are the ones that help Yasuo be strong before getting any items. They also provide him with more potent early game item backs like if he were to back for a Zeal or something of the sort.
I don't agree with going 12 into Ferocity and 18 into Cunning since that makes Yasuo so insanely squishy. He doesn't do much more damage with this mastery page than he would with the one that most are recommending, but this one is definitely more effective since he's really able to get in there and do work without dying immediately. It's quite startling because for the amount of damage that he does, he's quite tanky compared to what he was before preseason.
Feast and Vampirisim give him some pretty insane sustain in lane to the point where it beoomes almost impossible to poke him out of lane. Warlord's Bloodlust is a mastery that has natural synergy with Yasuo by healing him for 15% of the damage that his crits do. Since his crit chance is just natually always very high, he will be very hard to deal with.

I highly encourage that you at least try this build out since it's a very very powerful one. Once you see how strong it is for yourself, you probably won't build Yasuo any other way.
