Either AP or AD, but not full out hybrid...it's one thing to get a hextech to get some AD or AP added to an AP or AD build, but full out hybrid just isn't good. Unlike Kayle his passive does not give him a AP/AD boost for having some of each, so it just makes him mediocre at everything.
As for which is better AD or AP...I've seen people do well with either option.
Numbers aside, you should try both and decide which one you like better: because, in the end, that should be the deciding factor.

AP is good, but AD is better.

personal opinion is that ad ez in a sense is more enjoyable for me and i feel as i put out more damage and i dont really have to relay on my ult to get the kill in cases when i play ap.(call me a noob or what not some troll is gunna be like if you play ez and u cant hit ur skill shot ult your a noob)i will say stfu and move on but yea i think ad is more enjoyable

The big problem I see when building Hybrid Ezreal is simply the small amount of viable Items and the VERY high build cost of a build that can keep up in dmg with ad(namely Hextech Gunblades, and I am not quite sure if such a luxury build can keep up with a good ad build).
Either Riot tweaks Ezreals scalings or comes up with a new hybrid item. Before this, hybrid is only semi-viable.

And that's pretty much what I found. I experimented with all the items, so yeah. That won't get you the max AA damage, but it will get you the max spell damage as far as I know. (I used League Craft for that)
