Last night I had a traditional Filipino dish; at home we call "Tamarind Soup". Most Western palettes won't like the tangy and sour taste to this.
Ingredients:
- 1 packet Tamarind Soup powder
- 1 onion
- 1 tomato
- 3cm piece of ginger
- 3 cloves of garlic
- 3 tablespoons of fish sauce (petise)
- 3 potatoes (1 per person)
- bok choy
- boiling water
- chicken drumsticks, lower half of bone removed, skin removed (1 or 2 per person)
Procedure:
1) Chop finely the ginger and garlic
2) Dice onion and tomato. Cut potato into large chunks
3) Place onion, tomato, ginger, garlic, fish sauce and chicken into a large pot
4) Cook at high temperature until the onion is cooked (translucent) and the chicken is "white"
5) Put potatoes in pot.
6) Put the rice on (2.5 cups for 3 people)
7) Top up pot with boiling water until the ingredients is just covered, add Tamarind Soup powder to taste (it's quite sour, so add gingerly if you don't like sour or tangy foods) and boil or simmer until rice is done and potatoes are soft
8) 5 minutes before rice is done, add bok choy to steam on top of the soup.
9) Plate up :)

Last night I had Cauliflower Soup. Weird idea that I liked the sound of.
Ingredients:
- 1/2 head of cauliflower
- some broccoli
- two sticks of celery
- 1x packet of French Onion Soup
- 50ml of thickened cream
- 50g of Philadelphia cream cheese
Procedure:
1) Boil cauliflower, broccoli, celery and soup mix in 5 cups of water for 30 minutes
2) Blend the soup in batches (blender, stick blender)
3) Add cream cheese and thickened cream, mix well
4) Return to stove to warm
5) Add salt and cracked pepper to taste
5) Plate up ^^
