What if god is an invisible entity hiding in your washing machine, stealing one of your socks every time you wash them? The theory is stupid and doesn't have a shred of evidence in its favor. Much like "God", but being all-encompassing and "beyond our understanding" and such makes god the most annoying theory to disprove.. There's a very good principle that a person named Ockham used frequently; if there are several ways of explaining something: use the one with the least assumptions. It's even possible to describe the other planets in the Solar System as revolving around the Earth, but that explanation is unnecessarily complex compared to our standard planetary model that all planets in the Solar System revolve around the Sun. One could possibly theorize of God's existence, but it would be incredibly convoluted and require crazy amounts of assumptions. Hence the theory with the least assumptions is chosen; the one where God doesn't exist.
