Yeah, I wouldn't say he negates their bullying (in Renektons case, at least), he should still lose trades early.
Also, somewhat unrelated but having this thread in the week that Khazem (the - correct me if I'm wrong - only diamond top lane main on Mobafire) has no internet makes me sad :P

Haha ehm well that's unfortunate. Anyway, I've got a few diamond 3+ top lane mains in my friend list so I can ask them to join in if necessary / if there are any questions all the others can't handle.

Mid game there isn't much you can do versus a Jax 1v1. That's the problem and well, that's why he's a priority ban right now. Best hope is to kill him when he overextends (but don't commit too much - if possible - or they can take major objectives) or try to force fights if he doesn't have teleport.
