SotAG is an okay item, just kinda outclassed by the other jungle items. There are some champions that ancient golem is still desirable to build on though, like rammus.
Playing top tier junglers should be up to you. If you want to really improve the way you play though, it might be a good idea to familiarize yourself with the top tier junglers. it never hurts to have that sort of playstyle diversity
Depends on the jungler, and how you are doing. If you have 2+ assists, and a kill, it might be worth it to itemize more towards damage, and if you are behind, it might be more beneficial to itemize tankiness. Your itemization is also dependant on what your team needs as well though

The two dominant types of junglers are what I would call carry and pressure junglers.
Carry junglers:
Nocturne,
Master Yi,
Udyr,
Kha'Zix,
Wukong
Pressure junglers:
Lee Sin,
Elise,
Pantheon
Obviously some of these guys fit into both categories. Carry junglers tend to spend more time farming, take a lot of gold for themselves and build more damage than other junglers. Pressure junglers are built to gank early and often in order to snowball themselves and their laners in the early game. They usually build a little early damage but mostly defense.
Other junglers like
Amumu and
Nautilus are still good but not quite as popular and it can be pretty hard to deal with any of the popular meta picks if they decide to pressure you in the jungle.

If you want to farm all day you'd want to get wriggles anyway and if you want to gank you want a spirit item. It's not like you'll usually find yourself changing from a game plan on a specific champion that often (you won't find a maokai farming the jungle, or a udyr ganking 24/7) so I don't really feel the need to go that way. I doubt if you really need that extra clear speed/sustain from the second item as well.
Gotta add that I somewhat hate trick (his udyr is good but that's about it) and his fanboys so I might be somewhat biased.
