Sylas
This is fizz's hardest counter imo. Even if you get a lead early, since Fizz is stronger than sylas early on, once he gets points in W and Ability Haste he will win almost any trade and its not even hard for him to do so. I would use my ban on Sylas as a fizz player or dodge.
Elise
Fizz works best with super strong gank junglers. Not only is Elise a gank jungler, she is specifically a dive-heavy gank jungler. The insane dives you can pull off together between her Rappel and your E are unparalleled in this game, allowing many seconds to pass before one of you is in lethal range while also having high burst on the dove target.

Champion Build Guide
I've held the Number 1 Fizz NA Ranking in Season 11 as of June 2021, when I had a smurf ~150Lp master and 65% W/R Fizz over a number of games.

I also stream and try to keep everything chill vibes, and highly educational so you can learn to be a high elo mid lane assassin player yourself! Come chill with us as https://twitch.tv/Redeemteam most nights at around 8-8:30 EST!
The good thing about champs like Fizz is you are playing a champion with a kit that can make plays in a variety of situations, across the map, and give you a high chance of carrying the game by snowballing things out of control! Don't give the other team a break with you high impact roams, solo kills, and choking vision out as THE mid-lane difference in your game!
Just be patient, get level 3 while the wave is pushed to you and level up all 3 spells. This is your chance to counterattack; You can usually run down a lot of mids with a Q -> Auto -> E -> Auto -> W combo. Some people press W immediately when they Q, but this combo gives you the most DPS early and lets you ***es if the enemy is low enough to run down after with empowered W's and ignite. If you can't, you leverage the fact that you E'd the enemy and can walk away safely while he is slowed.
At level 6, Fizz becomes the deadly assassin he is. You should mentally assume that any squishy you can land a long shark on can be one shot with a R -> Q -> W -> E -> Auto combo, or with R -> E -> Q -> W -> combo, along with electrocute proc and ignite.
These are combos to use in lane, as well as in roams bot or top. This is where your TP/Ignite summoners will shine; if you are facing a counter matchup, you can look to change the ENTIRE GAME by TPing to a key counter-gank bot lane or TP'ing to a fight top that changes a 0 for 1 outcome into a 2 for 0 swing in your teams favors, plus double buffs in some cases. ALWAYS LOOK TO MAKE THESE KIND OF PLAYS; you are the mid laner, you carry the game by out pressuring and out roaming the other mid like the god you are!
Fizz functions as a champion that kills the backline; while you may fish the frontline to help peel for your ADC or other carries, you want to maximize damage of your combos by using them to kill targets. This is usually the squishy champs on the other team, but some times it can be good to chunk the tanks or other champs that are on your ADC for 50% of their HP if it means you can win the fight after. Ultimately this will come down to judgement and experience, but most of the time, as Fizz if you can land your combos on the enemy carries and one-shot them, this is the ideal scenario and how you carry the fight.
With Tp/Ignite, you can also look to try and force the enemy team to react to splitting the map, I.e where you go away from your team and force them to chase you or send someone to deal with you. Then you can get numbers advantage by TP'ing in, or behind the enemy and force them into a really bad fight.
1. In Season 11 a lot of counter matchups to assasins are meta in mid lane, including Viego, Sylas, Bruiser Talon, Aatrox, Sett, Galio, and Renekton. Even with Flash you will not be able to 1v1 many of these champs as Fizz, and so to snowball the game, you have better chances of getting kills elsewhere, like on squishy bot lnae champs when they break out into 2v2 fights.
2. With TP, you have better macro-based options to win the game mid and late game, since you can splitpush and TP to your team, you can also do things like go kill enemy split-pusher and TP back to your team while enemy tries to start objective like baron.
3. A lot of matchups mid, fizz doesn't get anything from Flash in a fight. E.g immobile champs like Galio, Sett, you don't really secure that many additional kills in the long run on these champs. Whereas with TP, you can either go get kills elsewhere or you can TP back to lane if you are being poked with some additional items that can maybe sway the lane in your favor.
4. In team-fights, if you fish an ideal target you often don't need flash to get to them. Especially with the high Ability Haste build I described above, you should be able to land combos and learn how many skills you need to kill a target and what kind of combos you can get away with. I will have videos with different combos to show you guys from my stream!
