Blitzcrank
Blitzcrank is going to make it harder to play around the lane especially since you want to control the bushes in lane. Just play around minions and try not to fight too hard against him. Maybe roam and hope he tries to match and loses XP.
Ashe
Ashe's CC combined with your mild CC and diving potential pair well for a safe but equally aggressive lane.

Champion Build Guide
Ekko provides some light CC with his Q Timewinder which applies a slow, that when used properly in lane can make the enemy ADC rip their hair out. Paired with his W Parallel Convergence he can lock down out of place enemies or catch them from bushes and over walls with pre placed wards and from flanks. His passive Z-Drive Resonance is a great tool to help him dodge in and out of fights, repositioning for peel or to re-engage with W again.
Think of this build as kind of a funny mix between Braum, Alistar, and Pyke.
Overall I think this is a new and fun way to play the champion, as well as throwing off your enemies during champ select and throughout the game.
In your secondary tree youre going to want to take the Inspiration tree. Here we take Stopwatch for a free stopwatch to build into our Zhonya's Hourglass and Minion Dematerializer to help us push a little harder in lane. If youre more concerned with poke in your lane you can always swap out the Minion Dematerializer for Biscuit Delivery.
These tankier runes are the cornerstone of this build. Without them you wouldn't be able to bash your head into the enemy team and blindly engage on them like you want to.
Your mythic of choice is going to be a Locket of the Iron Solari. This gives Ekko and his team some added tanks stats and a great shield for diving with or peeling backwards with. Your passive, Z-Drive Resonance also helps you utalize and repostion for activating this item during teamfights or skirmishes.
Next youre going to want to pick up an Anathema's Chains and link it to the enemy champion who youre looking to dive onto the most. This adds some tankiness to you as a champion, reducing incoming damage from the chained enemy, and also reduces their tenacity around you, so make sure to try and lane your W stuns.
Finally you can grab a Vigilant Wardstone for vision control and the added stats it gives. Vision is super important if youre going to take flanks against the enemy team and hop walls to stun the enemy carries, so make sure you have enough of it at all times with control wards and normal wards.
If youre not up for vision control (gg i guess), then just pick a situational item thats good for you!
Boots are again going to be a case of "what does my team need and what am i against" sorta deal.
