Nasus can be really annoying to deal with once he gets some stacks. He'll wither you and make it hard for you to get away while he mows you down. He also gets fairly tanky, making it a hard matchup. Try to bully him out of cs in the early laning phase, but back off when he reaches level 6.
Singed
Singed is pretty awful to play against as Akali because he's tanky, does a fair bit of damage, and can negate half of your abilities with his w. Play safe and ask for ganks.
Aatrox
Fairly easy to dodge his abilities as Akali, just don't let him snow ball and you'll win the lane.
Urgot
When Urgot ults you, just pop your W and wait it out. He can't do much damage to you while you're in there. Try to E away when Urgot Es towards you to dodge the cc and so you can go in for a trade.
Camille
E away when Camille uses her hookshot, dodge her Tactical Sweep, and that's pretty much it. Save your W when Camille has Hextech Ultimatum so when she uses it, she can't do anything to you.
Cho'Gath
Try to bait out Cho'Gath's Feral Scream before going in because if he hits you with it, he can land his other abilities and chunk you. Be careful of his ultimate, it does a surprising amount of damage.
Darius
If Darius hits you with Apprehend, you're going to take a fair bit of damage, so either bait it out or use your W right after to avoid his basic attacks. Darius can't easily get 5 stacks of hemorrhage on you, but he can whittle you down in lane until he can go for an easy all in. Try not to take any risky trades, and if you do, make sure you win them.
Dr. Mundo
Mundo's get's very tanky late game, Akali beats him in early game so try to bully him out of cs before he gets too tanky. When he uses his ultimate, it's usually best to just run away.
Fiora
Fiora isn't too bad to deal with. Don't get hit with too many vitals and you'll do fine.
Gangplank
Gangplank can poke you out at level 1, so just be careful. Around level 3 you can start going for all ins. Be careful of his barrels, they can do a lot of damage.
Garen
If you see your enemy pick Garen, it's not a good idea to pick Akali. Garen will silence you when you E in and spin you to death in your smoke bomb. If you try to get close enough to poke with your Q, he can run up to you and obliterate your health bar.
Illaoi
Dodge her Test of Spirit, E away from her ultimate, and be careful of her Tentacle Smash.
Irelia
It can be hard to land your abilities on Irelia, but it's the same for her. W when she goes for an all in or uses her ultimate.
Jax
Jax can jump to you and stun you when you E away, so try to W before he gets the stun off.
Kayle
Kayle can't do much damage to you at all while you're in your W. She's very weak pre 6, so bully her as much as you can before then to slow her scaling.
Kennen
Kennen can poke you out very easily, so try to stay back or hide in bushes. When he ults, you can ult through him and/or E away to a safe place. He's fairly squishy so if you get close, you should win trades. Good idea to take Fleet Footwork.
Kled
Kled does a lot of damage and is tanky. He can see you in your W if he uses his Bear Trap on a Rope. Keep your distance and you should be okay.
Malphite
It'll be hard to get away from Malphite when he uses Seismic Shard, but at level 2 you can out-trade him. Try to dodge his ultimate with your E.
Maokai
Maokai is very tanky and has a lot of sustain. He can chase after you very easily and still do a lot of damage to you if you W. Keep your distance and ask for ganks.
Mordekaiser
You should be able to out-trade Mordekaiser as long as you stay away from his passive unless he builds Rylai's Crystal Scepter. Don't try to fight him in his ultimate unless you are far ahead, just dash around him or use your W until it's over.
Ornn
Dodging Ornn's abilities is fairly easy. If he lands a full Bellow's Breath, back off until Brittle wears off. Just poke him with your Q and empowered auto until you can go for an all in.
Pantheon
Pantheon does a lot of damage early game, so be careful. Once you're level 6 you can dash around his shield and dodge his spears so you should be okay. Just play safe until level 6.
Poppy
Poppy's Steadfast Presence essentially negates your E and ultimate, so try to bait it out before going in. Try to poke with Q and empowered auto attack and don't go near walls.
Renekton
If you get close to Renekton, he can stun you and pull of a combo which almost always nearly kill you. Don't go in for trades and ask for ganks.
Rumble
When Rumble uses Flamespitter, E away or use your W. When Rumble uses his ultimate, just dash away. Fairly easy lane.
Sett
E away from his Face Breaker, W before he uses Haymaker to try to dodge it. Pretty easy matchup as long as you don't make any big mistakes.
Shen
Shen is pretty tanky and negate a lot of your damage. He can also taunt you out of your W. Don't go for unnecessary trades.
Sion
Really easy to dodge Sion's Decimating smash. Just use your abilities to dance around him and whittle him down and he won't be able to do much.
Teemo
When Teemo blinds you, disengage by E-ing away and go back in when it goes away. Teemo is squishy so you should be able to pop him easily.
Tryndamere
Annoying champion, but when you W he can barely do any damage to you so use it to wait for cool downs or to disengage.
Vayne
Vayne can't do any damage to you when you use your W, try to go in on her when she doesn't have Condemn.
Vladimir
W when he gets empowered Transfusion so he can't get empowered heal and damage.
Volibear
Tanky and his passive is annoying. His rework is coming up soon so I don't know what it'll be like when this comes out.
Wukong
Wukong is just really strong right now. Not too much else to say.
Yorick
When Yorick uses his ultimate, ask for a gank and try to stay away until you have your jungler.
The only thing that makes this Akali build special is Death's Dance. This Akali build is supposed to make you more of a AP bruiser rather than an assassin. The healing on Conqueror or Fleet Footwork, Ravenous hunter, and the combination of Death's Dance and Hextech Gunblade can turn you into an unkillable bruiser that still can still dive the backline and assassinate the carries.
Why I Prefer This Build
This build on Akali is frankly easier than more common builds. You don't have to worry about dodging every ability in a team fight because you can easily heal the damage back. This Akali build can't hyper carry a game like other builds, but I find it to be a safe and fun way to play her and I encourage others to try it.

Level 1: Q > AA > Q > AA
Level 2: Q > AA > E1 > E2 > AA > Walk away > Q > AA
Level 3: Q > AA > E1 > E2 > AA > W > Q > AA
Level 6: Q > AA > E1 > R1 > AA > W > Q > AA > E2 > AA(optional) > R2
