Olaf out-sustains and out-damages Hecarim by a long shot. In order to play versus him, you need to focus on farming and ganking early game. Never force a 2v2, because Olaf will win. Even if you have an item lead on Olaf, you will never beat him in fights, so just focus on getting the rest of the map ahead.
Nocturne's fear makes it impossible to win fights versus him. You need to avoid Nocturne early game at all costs, and focus on farming the jungle. Never step into his side of the jungle unless you have vision of him on the other side of the map.
Udyr out-damages you at all stages of the game. Never fight him and focus only on ganking and farming. Chances are he will try for invades, so you will need to ward jungle entrances whenever possible.
Gragas has many mechanics that enable him to burst you if you aren't careful. You can fight Gragas in the early game, but after first back do not interact with him unless you have an item lead on him.
Elise is only a problem if she gets an item lead. Try to ensure that you snowball off of the map early game and she will never be an issue. The main problem with this matchup is she bursts you before you can get any healing off, so if you can survive her initial burst you will end up killing her.
Nidalee will always go for early invades, therefore you need to start on the same side of the map as her and make sure that you ward the jungle entrance on the side of the map that you're pathing towards. If she gets an item lead you will die in one combo, so make sure that you play relatively safe early game.
Kha'zix can out-damage you because of his isolation mechanic, so you will need to just focus on farming early game and ganking. If you get an item lead he will be easy to kill, so try and get a kill or two before counterjungling.
Lee Sin out trades you early game, so before you fight him you will need to have at least a completed warrior. Focus on early ganks to try and come ahead, and this matchup will quickly swing in your favor.
Zilean's movement speed increase is very good for initiating fights and roaming around the map quickly. His ult also allows you to make dives into the entire enemy team and revive, meaning you can win fights with relative ease.
Kayle's ult means that you can run into the enemy backline and survive for several seconds while getting a lot of damage off.
Yuumi can attach to you and constantly heal you, which means that once you get spirit visage you will be near unkillable.
Lulu can give you shields, movement speed increases, and even a health boost. This makes mid-late game teamfighting less of a hassle.
Riven can dive into the enemy backline with you, meaning that you can make quick work of any carries on the enemy team, since both you and her have insane amounts of AoE damage.
Rumble can shove in waves super quickly, meaning that you want to take advantage of this and coordinate invades into the enemy's jungle.
