He is a good cheese pick against generally squishy team compositions.
Malphite's main weakness is pre-6 and overall low mobility. Once you reach 6, try to look for an easy pick and let the snowball begin. You can roam if an enemy is overextended or kill your laner if they're at half health. Remember you'll be taking Ignite to secure the early kill.
I have a lot of experience playing Malphite. I'm currently Mastery level 7 with over 400,000 Mastery points. I've played Malphite Top, Mid, JG, Supp, and yes, even ADC. Some roles work, others don't.
Wave clear and early-game farming has been made much easier ever since Malphite's W has been reworked. This is why Malphite Mid is so good right now. Keep in mind your early mana pool is still really bad. I'd advise against constantly poking your laner early or else you'll run out of mana quick. Prioritize using mana for waveclearing (your W) and only poke when your enemy engages to hit you. Once you upgrade your Q twice it should come online.
You should be able to get a kill the moment you hit level 6, unless you weren't poking your enemy enough or if they're playing super safe. If that's the case, look to roam. Malphite's ultimate is one of the best for ganking, however he is pretty slow. If you're going to roam, push your minions to enemy turret.
TRY NOT FALL BEHIND! This is a feast-or-famine champion. Play VERY safe pre-6. Once you reach level 6, don't underestimate your ultimate combo. If an enemy is half-health and you have Ignite, go for the kill! Try not to make it obvious that you're going in or else your enemy will just flash.
If played correctly, there will be a certain point where you'll snowball so hard you'll feel unstoppable. DON'T GET COCKY! Watch out for Stopwatches and know if an enemy has flash/escape ability to dodge your ult.
Try not to kamikaze for a kill unless it's a pick that will win you the game. Your enemies will get tired of your **** and build counter items (Banshee's, Stopwatch, etc) so watch out for that. Always check to see what your enemies are building!
Domination

With Elecrocute, you will be able to Scooby on any squishies. You are a true AP assassin.

More Magic Pen for your full combo. A solid rune overall.

Collect the eyeballs of your enemies = 30 AP in total. Pretty good deal.

Malphite is so ult reliant that if you don't take this you're a bigger clown than I am.
Precision

More CDR for your ultimate, and the mana back is a nice bonus.

Extra damage to help secure kills after a full combo.
Taking Arcane Comet makes your Pre-6/early-game much better at the cost of extra burst damage.
