Introduction
For the first back you will have enough for the Tiamat if you got good cs after getting a level 1 kill, If you do not have enough for the Tiamat then just get an extra longsword and some health pots. Boots are an item you get if you have enough for, they are really nice early to run down your opponent.
Now for the Core items, I rush a Ravenous hydra. The Ravenous hydra is good because of the lifesteal you get from it and the active helps with pushing lanes out. After Ravenous I go Black Cleaver. The Black Cleaver is good for sticking to targets with the phage passive, and is good for shredding armor. For boots it depends on the enemy team comp, you can go mercs if they have a lot of cc, tabis if your laner is auto attack reliant (Someone like Tryndamere) And swifties if you want the extra movement speed.

Pros
Crazy early game damage.
Can deal true damage out of the ***.
Can kill literally any carry he wants with his ultimate if he doesnt get bursted down.
Good split pusher because of his W.
Cons
No hard cc. (Stuns or roots)
Easily kited without ghost or ulti.
Falls of a bit late game.
Without his ultimate in team fights he can be easily dealt with.
The way I play Olaf that works a lot is going straight for a level 1 kill depending on the match up, if this works yay i got a tiamat super early and have probably made the enemy laner use tp and or flash. Usually if you get this early kill you can keep killing him or her everytime you have ghost up. After the early game laning phase I stick in my lane a lot, push it to the inhib and then group up with my team once I get most of my items. When playing Olaf I am always looking for openings/objectives, say everyone is mid and you see a lane that can be easily pushed I will almost always go for that tower, this can put the enemy team in a difficult situation, do they give up mid and stop the Olaf from breaching? Or do they keep pushing mid and ignore him. One way or the other they will lose something, going for Olaf can cost either a dragon or a baron, or even mid towers, but going for the 4v5 team fight can cost an inhib from the split pushing Olaf. Sending one or two people turns the teamfight around and wont do anything against Olaf half the time, since Olaf can easily 1v2.
