I've been looking up this post and it's interesting.
I like to build GP without boots since I always get a PD or Triforce with the E I don't need them for MS. Also I like Zephyr a lot. BT is a nice choice for the life you gain back after you hit a crit. And like toweli said, don't forget a warmog.

damage from icebourne gauntlet will give you extra gold on your Q, brilliant tactic for farming, getting 2 caster minions low and finishing the middle with a Q gives triple bonus gold, definitely a must have item for early/mid game, I believe statikk shiv works the same too, definitely the best way to start a go build imo but I'm sure many would disagree, after those items and maybe an IE I go defensive
GP isn't super viable as a top laner right now but I'm pretty sure the (good) people that actually play him build Ravenous Hydra and/or Iceborn Gauntlet with a mid-late game Infinity Edge. I guess you could go with Statikk Shiv but I don't see it being all that effective. I'd probably just build tanky from there.

after playing a bunch of gangplank, i realized that going crit is only a viable option when you are ahead. Behind vs physical? get iceborn. Behind vs magical? get hex/spirit visage. Tank/cdrplank is amazing in teamfights thanks to the support he offers. Dorans blades are amazing to give you the uuumpf you need earlygame. Brutalizer vs squishy targets. Tear if you find yourself in a sustainwar/farmlane. Stattik shiv is by far the best crititem to get on him early. after that i would get an ie/lw, then the other.
As critplank you will get rolled if behind, so always adapt.
The only reason gangplank is playable atm is that he is so versatile. USE HIS OPTIONS. combine builds and try around. EG lifesteal quints for some matchups, armorpen, armor, mr, hp5 for others

i wouldnt always get last whisper since you get a long range AoE slow with Q if you use iceborn
i had a fun custom game where i went QSS+Crucible and then got Cleanse, never gonna get cc'd ever but i wouldnt get them in a real game (except maybe QSS if you upgrade it as a defensive item against a fed AP, but why get that when you can get SV? unless you really wanted the AD from it)
