Cho'Gath is probably my favorite pick against him. He has the stuff to do okay in lane and his late game is pretty solid. Irelia, as Evil said, can survive the lane and outscale him. I don't think I've tried Jax but I imagine you'd be able to outtrade him if you pick the right engagements.

Because Udyr will survive, not win.
He can't trade at all without running straight up to him and Yorick will kite him way before he does that.
Sure Udyr has the shield, but it's not like you're going to have it up all the time.
