Build Zhonyas first and you should be fine. Try to poke him down and shove lane so he can't roam.
Fizz
Build Banshees first. If you can get good at using your R to dodge his then you will be fine.
Ekko
Poke him down, if you can kill him before 6 that will be huge for you.
Diana
Annoying champ once she hits 6, just stay back and wait for help.
Kassadin
Anti-mage champ, he beats you for the rest of the game after his first back.
Katarina
As long as you play safe and don't give her a kill early you should be fine.
Yasuo
Auto-attack as often as possible before he backs or hits 6. If you sleep him throw your q to the side as he will almost always put up his windwall infront of him. If he knocks you up, ult if it lets you and he will ult where you teleport to which lets you get away. Play safe once he gets his first item.
tl;dr: Auto-attack as often as possible. Throw your q to the side.
Veigar
Don't ult unless you use it to dodge his abilities(Besides his wall) or to increase your q range.
Malzahar
Nothing you can really do. He has very good wave clear and he beats you at 6. Either roam or wait for a gank/help.
Vladimir
If you sleep him he can w it and not take damage unless you time it right(Takes a game or two to get used to). Late game he will just steam roll you :(
Annie
This matchup can go either way. She won't have enough damage to all in you until 2-3 items. You can't really all in her either. Poke her as much as you can and play passive when she has her stun up.
Ahri
Just run cleanse and you will be fine.
Ziggs
He can't 1v1 you at any point in the game.
Karma
You can beat her in all ins, just be ready to dodge her empowered q.
Xerath
If you are good at dodging his abilities and/or he is bad at landing them then you will be fine, he can't all in you until he gets around 2 full items, and by then you can 1 shot him.
Azir
Never played against him as Zoe. I assume though that he can out poke you and beat you in a 1v1. Use walls to your advantage when using your e.
Karthus
Boring lane, most of the time after level 3 they just sit back and farm, if you land your e though he will either die from your all in or be forced to back. Build Zhonyas when facing him due to his ult.
LeBlanc
If you land your e you will win trades, only annoying thing is her passive has a short cooldown, so be certain you ignite the right one if you do it after her passive procs. She will 1 shot you late game though.
Akali
Same thing as Kat. If you die to her once during laning phase you will lose. If you sleep her, you can see the outline of where she is in her shroud, therefore making it easy to land your q.
Anivia
Pre-6 just dodge her stun and you win all trades. After 6 just be careful of her wall, can let her do high damage to you.
Irelia
Just poke her out, if you land your sleep you will be fine. She does have high damage though when she gets her stacks. Late game you won't be able to 1v1 her at all(Unless you are like 10-0 and she is 0-15).
Aurelion Sol
Not sure, I haven't lost to an Aurelion Sol as Zoe but, he does have very good wave clear that requires him to stand to the side which makes for an easy sleep. Should be fine though. Also if you can counter roam as his champ is very good at roaming.
Galio
You don't really see him mid anymore, but I will include him anyways. You can't really all in him as he has that magic shield, but you can't die to his all in either.
Cho'Gath
Been seeing Cho in mid lane more recently. Just be be ready to dodge his knock-up and don't get close to him so he can silence you. Also be careful at 6.
Heimerdinger
Not a big deal, just annoying, once you get used to playing Zoe you will just destroy lane.
Zyra
I hate this champ. Early game she can outpoke you and out all in you. At around 2 items you will be able to deal with her no problem. Be careful for her root.
Talon
As long as you can land your e over walls he won't be hard to chase. You can build Zhonyas against him if you don't feel conformable. You should be fine though.
Been playing Zoe since I first started the game(Around summer of 2018). I played the champ from levels 12-130ish then just got bored of her and stopped. She has very high poke and burst damage even without items and is one of the best level 3 all in champs in the game. You can run a wide variety of runes and items with her which is nice. The main thing is just getting good at landing your q's. Besides that she is a pretty easy champ with high damage. I'd recommend roaming and helping other lanes the most if you are on top side of the map(I think it is red team?). That way it will be easier to set up sleeps on bot and top lane.

I stream occasionally, and when I do it's league. If you want to see me play Zoe just ask in chat and I will. twitch
For Grasp
Grasp is my personal favorite to run on Zoe. It works well in mid and top lane, especially against a melee champ. Try to use it as often as possible(Should be able to use it around 35 times in the first 10 mins against aggressive melee champs), and when you do ONLY auto-attack them, if you all in then they will stay back and not risk getting damaged. For Klepto
Klepto can work on Zoe if you play it right. It will truly only work if you are going against a melee champ that doesn't have any ranged abilities to cs with. Just make sure that the wave is pushing against you constantly so that way they have to stepup to cs and can't just sit back. The best champ to use klepto against is probably yasuo, since he doesn't have to worry about taking too much damage due to his passive. For more info check the Inspiration rune page on this guide.
For Press the Attack
Press the attack isn't the greatest rune to rune on Zoe. If you do, proc press the attack before hitting your q/hitting the enemy champ while they are slept. You still build ap. This rune also isn't bad for poking laners, as procing PTA will deal damage to them at the end(Pretty much a worse electrocute). PTA does have the potential though to deal more damage then other runes as long as you proc it before going all in.
