Her early levels are stronger than Aatrox. But after level 4 you win out most trades. After that she has to wait for her Sunderer power spike.
You can bully the hell out of her in these windows. Try to deny her, her W's. If she goes on you, fight back. She has no escape if she goes in on you and the only thing she can do is ult your Q3. You can kill her without it.
Boneplating is great vs her because she is an all in champ.

Akali
Depends on how she plays lane. She can beat you, esp if she runs ignite. But you beat her too. Watch her level 6 burst. She can one shot you. Go Dshield, and use your Q level powerspikes. Don't hard commit on her just trade.
Akshan
He's annoying early on, and has a lot of burst that he can even tower dive with. Respect his early damage. You can rush tabis and with one longsword and tabis you can start winning the lane. Try to pressure him as much as you can after you get tabis.
Darius
Darius is not that difficult, but he can absolutely demolish you if you are not careful. Most darius will level 1 cheese you and probably win if you fight extended. After level 4, start fighting him. Don't over commit but if he wastes his Q, or you dodge it, go for the kill, esp after 6. If you bring ignite his threat to you is much lower.
Dr. Mundo
Mundo is annoying because he can just farm with his Q and coinflip the game. But other than that just play standard. Dodge his Qs and hit yours. You will throughout lane beat him. You can get execs too if you need it.
Fiora
A good Fiora is difficult, but most Fiora's just play Fiora to counter pick. Fiora's main counterplay comes from her healing, speed, and her parry.
You can play around parry. Most Fioras follow a pattern. Some parry W, some parry Q3, some parry Q2. The better Fiora's are unpredictable. But remember she has to land her parry. If she doesn't its a pretty long cooldown that you can punish. When she ults you can hug a wall. Get execs if your having trouble but Aatrox can handle this lane pretty easily.
Garen
He doesn't have dashes and is a pure melee champion. Just fight him extendedly. Keep your autos up as well. After 6 he can cheese you so play around his ignite ult burst. But otherwise you beat him.
Gangplank
While GP is not that difficult for Aatrox to beat. GP is a little overstatted if played properly. He also can die alot but will keep up in items from all the free gold he generates. Still think of him like a ranged champion that can melt you in melee. Your best bet is to break his barrels, play aggro, go Dshield, and watch out for when he uses his passive.
Gragas
Gragas is an annoying champion. He plays ranged with his barrels, has sustain and body slams you to disengage and sits under his tower. You can try your best to get ahead of him but otherwise you cant do much. He doesnt really have any kill potential on you unless you eat alot of poke. Just be careful not to get ulted under tower.
Gwen
Gwen after 6 can absolutely melt you. And if she playes it right she can deny you most of your abilities with her W. Respect her Q/dodge it. And her level 6 powerspike.
Illaoi
Illaoi is strong in melee, but she's also like Garen is she is a pure melee champion. If you run ignite, you can ignite her during her ult. If she takes your vessel you can contest the vessel. She either has to hit you or the vessel, she can hit both with her tentacles as well, so try to dodge those and you will outtrade her.
Irelia
Irelia can pretty much beat you. I permaban her. But you can beat her if you play really well. Dodge her E, and try time your Q's near a dying minion where you predict she will dash to. If you dodge her E you can mostly win the trade. Just don't extend the trade alot or she will kill you
Jax
A good Jax can definitely beat you. But Jax has no real escape. If he goes in on you W him and force him to eat all your Q's. Since he will hug you make him eat Q3 and then E away to disengage. He will outscale you.
Jayce
He has a lot of burst, is ranged, and with phase rush he disengage really fast. The trick is to not use W until after he uses his hammer to push you away. After that when your Q comes up you can hit him. If you are 6 probably kill him.
K'Sante
K'sante is hella annoying. He can chain CC you and burst you after 6. He is too tanky and has too much CC. But I find going cdr minor rune, and rushing cleaver works well against him.
Kayle
She's very weak early on and you can abuse her. But she can absolutely run you down level 1 with lethal tempo so respect that.
Gnar
Gnar is similar to jayce. If he uses his E you can punish him. Just dont waste W alot.
Malphite
Malphite is annoying. Esp with arcane comet because he plays like a ranged top. But if you keep up in levels get some MR early on and rush cleaver you should beat him.
Cho'Gath
Very easy, play standard. He's weak early on. The only real advice would be to dodge his Q.
Kennen
He has no kill threat on you. But if he has half a braincell its pretty much impossible for you to win this lane.
In teamfights he offers more. You can try to approach him like Jayce, get him to waste his move ability without using W. You can try hexdrinker into him but it won't really do much except make the lane even more coinflip than it is.
Maokai
Again really easy, he has no kill potential on you. The most he will do is maybe W one of your Q's and push you away. You can bully him all day long, but he can setup ganks pretty well
Mordekaiser
Morde can beat you but his mace is short range, his E is easily dodgeable by your E. You can also time one of your Q's with his pull to get a free sweetspot hit on him. If you are experienced on Aatrox thats doable.
Don't ult before he ults unless he's close to dying. Maw completely ruins him unless you are really behind. He can be annoying if he goes bramble tabis.
Olaf
Olaf is also "level 1 run you down" champ. And after 6 its hard to fight him because you can't CC him and he runs ghost. Play more defensive than usual and look for opportunities where he over extends. Try to dodge his axes. Don't over commit, with his shield and healing he can beat fairly easily.
Ornn
Ornn is the tank that does it all. I like going MR vs him because it lowers his burst against you. I prefer Dblade, however Dshield works well vs him too. Try to avoid getting hit by his brittle auto. And keep hitting Q's on him. Eventually you'll wear him down.
Quinn
She is ranged and annoying early on. But her E puts her in your Q1 range. So when you see her E animation just press Q where she E'd from. She will land on you Q then full combo her. Like any other ranged top go dshield.
Pantheon
Pantheon has a lot of damage in his kit. And has a spammable Q. He can deny you a sweetspot with his W and E out as well.
In this matchup you don't usually want to Q3 unless he has used his E. He doesn't have a 1v1 ult unlike you, so if you really want you can wait out until 6 to start winning against him. Dshield is good against him. Also when he jumps on you you can time your W before his stun connects. He won't be able to get out and then you can extend the fight, and you'll mostly win out if you do.
Renekton
Depends on how he plays. If it's a good Renekton he is definitely a threat. I think of Renekton as very similar to Aatrox as a champion. He will usually get prio over you because his Q level 1 is spammable. His stun lasts longer now and he can extend the fight and probably win out vs you if he does. You can W him as soon as he dashes on you then if he wastes time stunning you he will probably get pulled if he dashing away. Make sure to do damage to him after his combo ends but don't over commit because his CDs will come back up and he will beat you. Tabis and execs will eat alot of his power against you.
Riven
An ok Riven is minor difficulty, a good Riven is major borderline extreme threat. Still you can beat a good Riven easily too there are just a few things you need to know. Rivens play two ways. One uses her Qs to dodge your spells. And the other plays aggressive and gets in your face to kill you. The first one, you cant do much about it just try to make her work for her cs and contest all of it. For the second one keep your distance. If she wants to all in she has to get in your range for that make sure she has to waste one or two Q's. After level 6 she can all in one shot you with ignite and her ult. Go tabis if you need to but you don't need to if you respect that her CDs will come back before yours. Make her work for CS, slowly chip away at her, and have good spacing.
Kled
He can beat you but mostly play around his Q. Get him off his mount and wait for him to waste his triple strike. That's when you can go in for the kill. Tabis can help against him.
Sett
A good Sett can make this lane even. Otherwise he's a pure melee champ as well. Punish him for every CS, side step his slow W, and don't go for Q3 if he has grit up. If he ults you, you can Q before to get some damage off and he lands behind you so you can Q in that direction too
Shen
Early on he has surprising damage. But he doesnt really have a level 6 while you have a major spike at 6. You can go MR to lower his burst. You can E his E as well and if he goes in he has no way of getting out.
Rengar
He's annoying for sure. He can deny alot of damage as well. But other than that he's pretty useless vs aatrox. You can predict where he will jump to and combo him. You can go Dshield as well. He will be hard to kill because he is innately tanky. You can get the shove on him too and then he cant play from the bushes. Ward lane bush as well is another thing you can do.
Singed
In lane he is extremely easy to deal with. You can deny his proxy by catching him in jungle before he can touch your wave, and zone him off. If he still manages to, just let him do his thing. If your jungler has a braincell he will kill him, if not just farm up. Later on he is way better than you in teamfights. With movespeed, and rylais and his tankiness he will do alot in teamfights so just realize that. If he stays in lane then just play aggro vs him. You can Q backwards when he flips you and it'll hit him.
Nasus
Probably your easiest matchup. But if he does some dorans ring cheese then it can be difficult to get ahead of him that easily. Still he's a pretty terrible champion esp early on so just go aggressive on him and make him suffer for every CS he goes for. If you are even and he gets sunderer then you are in trouble. But he should never be even with you.
Yone
Has too much in his kit. And is a monster with just lethal tempo and greaves. If he plays it well he can nullify your Q1 or Q2 damage with his shield. He can safely trade with you with his E as well. Dodge his Qs, kite out his E. If he screws up you can do alot of damage to him because he is pretty squishy. You can space his W as well and his Qs
Urgot
Dodge his E, he's not that difficult. You can W him if he goes in on you. He's a budget ranged champ. You can play around his shotgun knees as well. But if he is good he can beat you. Becareful of diving him with his E, and his level 1 E cheese.
Volibear
Just don't let him touch you. Dodge his thunderbolt, and you're good. It should be fairly easy. Play standard and aggro.
Tahm Kench
The only thing he can do is after 6 eat you and throw you in tower. Other than that just go ham on him. Deny him his heals with his tongue too. You can predict when he's going for it.
Sion
You can cancel his Qs. He is squishy early on too. Just becareful of his bush cheese. Otherwise just go aggro on him, not much he can do except pray.
Wukong
Barely see Wuking anymore. But he can beat you easily. He is like Riven after 6 in that he will 100-0 you with ignite. He can run you down level 1 as well. If he goes in on you with his before 6, W him so he cant get out. If he uses his W predict where he dashed to and give him a few Qs before he can get out. You can also use your passive on his clone and stack conqueror on it to even out the trade.
Warwick
WW is cheesy. He will run lethal tempo and barrier. His whole plan is to get low health and furiously auto you and out heal you. So its basically a bait when he's low health. Know if you have enough damage to kill him otherwise don't get baited by his low health. Go heal reduc early on and he's pretty much screwed. After 6 he will add his ult into his get low health and dump everything strat so be mindful of that. Play calculated but play aggressive.
I am a high diamond - low master Aatrox one trick. I play in NA server and have peaked at about 450LP Master this season. I mostly only play Aatrox and have been playing the champion since Season 4.
I hit Platinum in Season 4, and hit Diamond in Season 5. Most of the matchups I have learned them through my own experience and not online. So maybe you can learn something different from the way I approach them.
Early Game
Before minions spawn
If you are tryhard enough, you should guard one of the entrances to your junglers jungle. Simply to help him not get invaded and then him perma ping you and annoy you.
If you have a hook support on your team, you can invade with your team. Your level 1 isn't that great but it can work.
If they have a hook support, you can camp a bush with your team. Or just ego it and walk straight to your tower and go grab a drink or something.
Level 1 - 3
Be patient
Be a stoic. Realize you lack power right now. Embrace zen. Keep the enemy top away from you. Trade/ poke well and get the CS you can get. If you can, have your jungle path away from you, or hope for a counter gank.
Still there are some lanes you can play aggro in (like Nasus). In those lanes you should get prio. If you do ward the bush before 3, so you can prevent being ganked.
Go DShield if you want a more guranteed easier level 1 - 3.
Level 4 - 11
You are becoming Aatrox
You spike with every level. Every point in Q is hell you inflict on the enemy laner. Make him regret queing up. Play aggressive. But also play matchup dependant. Look for plays, outplays, 1v2s. Know your limits and play aggressive.
At Level 9 and Level 11 you are THE WORLD ENDER. Make them regret breathing the same air as you.
Mid Game
Look for opportunities
At this time, you should have your tower. If not, they probably have your tower. Look around the map, see objectives. Try to read what the enemy team is doing. Show up. Be there.
Also keep up in farm. That means collecting side lanes when its safe to do. With TP, keep pressure up in the sidelane away from the next contestable objective.
Late Game
You are at the Mercy of Riot Games
Once everyone has 3 items. You have to play like Faker. There will be too much CC, too much damage, and alot of unpredictability. It'll be easier for you if you have a primary engage, because you wasting your E to get in range and maybe missing a crucial ability or someone flashing out or dashing out will be death for you.
If you go pure bruiser, you will have more survivability. But your purpose usually is front to back, and sometimes you can flank and get the backline. But it's not as easy as an assassin because you have limited range, and no way to get out.
Rely on you ult resets. Know your limits.
Additional Tip
Ward
Put down wards,
Put down red wards.
They are not for you, they are for the muppets that play with you. So they won't walk in a bush and die for no reason.
