Graves does not do well into AP matchups, and Evelynn can burst him down super quickly before he can even react. You'll have to try to invade her jungle and abuse her weak early game to secure a lead. I recommend rushing Hexdrinker to remove some of her burst. You should also take Sweepers to track her when she's invisible.
Karthus
My personal ban. Karthus outscales you HARD late-game, and his AP damage will make Swiss cheese out of you in teamfights. Your only chance is to invade him super early as he has the fastest but unhealthiest clear out of all the junglers in LoL. If you don't grab a hard lead the game will be over.
Kha'Zix
Kha'Zix wins the 1v1 in the early to mid-game with his insane burst damage. You need to respect him early and keep track of his whereabouts. Into the mid-game it becomes more of a skill matchup, so long as you don't facecheck bushes and use your longer AA range to your advantage. Most Kha'Zix players use Phase Rush these days, so be cautious as he can stick onto you with your own runes and his E. Take sweepers early to track him when he uses his R.
Jax
Jax can dodge your AA's with his E, and if you try to kite he can stick on you with his Q. Try not to get stunned and play around walls, as he cannot dodge your Q or your R. A good thing to do is pop your W when he lands on top of you.
Nidalee
Nidalee can invade you with her high mobility and catch you off-guard with her AP burst damage, but as long as you avoid her spears with your E you can duel her. Just try not to get too close for comfort.
Nunu & Willump
Nunu can be very hard to deal with, as his W is very hard to kite and his AP damage is rather large for a tank jungler. It's hard to win 1v1s early due to his Q healing, so you need to rush Executioner's Calling in order to duel him. Try to play around walls and corners to dodge his W. You can also move out of his R with your E, but don't use it too early as the radius is very large and it will still slow you if you don't escape in time.
Rammus
Rammus thrives off of AD matchups due to his W passive and Thornmail. Though you win early 1v1s, you cannot kite this guy when he uses his Q, and his knockup/taunt will make you kill yourself (literally). Best you can do is rush armor penetration items (Black Cleaver into Lord Domnik's).
Rengar
Rengar has the potential to one-shot you through bushes, so try not to facecheck if you think he's around the area. If you spot him in a bush, you can pop your W on him so he can't leap onto you. If he has no bush to play around, it is possible to duel him 1v1. You need to dodge his E, and watch out for his R as he can catch you by surprise and kill you before you can react.
Shyvana
Shyvana's natural tankiness and AP damage makes her a hard opponent to fight. As she is a farm champion, you can try to invade her jungle early to maybe steal her camps or kill her by surprise. Try to avoid her E and deny her any objectives (ESPECIALLY DRAGONS) to get a chance into the late game.
Taliyah
Hard matchup. Taliyah has more range than you with her Q and can kite you hard (though you can avoid it with your E). If you try to run, she can use her E+W combo to knock you back into her and burst you down with her AP damage. Best thing to do is try to invade early and rush Hexdrinker.
Udyr
Udyr wins the 1v1 if he ever gets into melee range, and he can do that quite easily with how fast he his. His cc and damage are nothing to joke about. Kite him as best as you can and get some help from your laners to lock him down.
Volibear
Volibear is actually difficult to kite because of his Q's movement speed. You'll want to pop your W when he gets close in his Q animation, otherwise it's a guranteed stun for him. Even if it seems like you have an edge, Volibear can heal if he hits you with his W twice. Avoid his E with your E, but watch out for his R when you're under towers as it disables them for a short period.
Wukong
Wukong has higher burst damage early, so you need to try to respect him. Kiting is hard as he can stick on you with his E. Watch out for him in teamfights as his R can bring the fight into his team's favor. I would bring Sweepers early to track him if he uses his W.
Yasuo
Not a jungler, but I honestly hate playing into this champion. His W will negate ALL of your damage and abilities and he will just play around it when you gank him. If he hits his R on you, your armor won't do much as his crits have bonus armor penetration afterward, so it is ill-advised to duel him alone. I don't recommend picking Graves into Yasuo.
Amumu
You can avoid Amumu's Q with your E, but he does outscale you into the late game with his hard-hitting CC. Invade him early (especially his Blue Buff) to get a good lead on him, as his clear is very slow. Don't let him get close, as his AP+True damage can't really be tanked by you and shouldn't be underestimated at any stage of the game.
Ekko
You can invade early and force 1v1s to try and grab a lead on him, as Ekko is reliant on items and snowballing to be an effective assassin. If he gets his items, he has the potential to burst you down so be cautious. Ekko is super reliant on his ultimate when fighting, so it's good to fight him when it is down.
Elise
Elise has a super-strong early game that can lead to hard invades in your jungle, especially as an AP jungler. Try to avoid her cocoon with your E as much as possible, as getting stunned is certain death. Her rappel is annoying as she can use it to avoid most of your damage. Elise falls off super-hard into the late game, and as long as you stay at least even with her you will win teamfights.
Fiddlesticks
He is a heavy CC champ like Zac but with less tankiness. You need to invade him early and try to shut him down so he doesn't scale. Just be aware of his CC as his Q and E allow him to disengage. I recommend rushing Executioner's Calling to mitigate his extreme healing with his W.
Kindred
Skill matchup. Kindred can play your own game and kite you due to her longer AA range. Kill her marks whenever possible. You can win the 1v1 if you get close enough, just watch out if she uses Q to disengage. Don't use your R until AFTER she uses her own, as after the effects and healing have subsided you can burst her down with it.
Lee Sin
Skill matchup. As long as you avoid his Q with your E you should be fine. Lee Sin can be an invasive jungler so try to get vision in his jungle early. Later in the game he will fall off and just become a kickbot, so use your scaling to your advantage. With items you win 1v1s with your higher burst.
Lillia
Lillia can be very annoying due to her extreme MS and her AP/True damage, and it's hard to stick on her effectively even with phase rush. Don't underestimate her early game damage, and try not to get hit by any of her abilities as this gives her an opportunity to sleep you with her R.
Master Yi
You win 1v1s in the early game, so try to invade and force him to fight. Later when he gets his item powerspikes he will become a menace. Set him behind XP and farm as much as possible. When dueling, pop your W AFTER he uses his Q on you. I usually take Ignite into this matchup.
Nocturne
Skill matchup, but one of the harder ones. Nocturne can stick on you pretty effectively, but as long as you dodge his Q you can kite him. You can pop his spellshield (W) with your own W or your smite so it can be safe to use your Q and R on him. Don't let him get too close, as if he fears you with his E you're most likely dead. If he pops his ult, try and stay out of vision or with your team to react.
Pantheon
Very hard to fight early due to his point-and-click CC and his high burst damage. His E can also mitigate your damage entirely, so avoid fighting him early. Pantheon does fall off hard, so you'll want to farm more and scale to your advantage.
Sett
Skill matchup. You can kite Sett even if he uses his Q to try to run you down. Try not to get too close so you don't get hit by his E or his R, and so that he doesn't proc his own Phase Rush to stick on you. If he uses his W, you can dash behind him so that you avoid all the damage from it. If Sett cannot get close to you, he relies on his abilities to close the gap on you, and they have big cooldowns early.
Skarner
Don't underestimate Skarner's CC along with his damage. Dodge his Q with your E, and if you keep kiting him you will outduel him at any stage of the game. You should buy an early QSS to negate his R.
Shaco
Very annoying but not impossible to deal with. Take sweepers early to reveal any boxes he places and to track him when he uses his Q. Most Shacos try to invade with Ignite/Smite so watch out for that. You should rush a defensive item (Hexdrinker or Aegis into Death's Dance) to mitigate some of his early damage.
Vi
Vi relies on getting close to her opponents and hitting them with her CC to do work (and she's pretty good at doing that), but you can avoid her Q with your E if you know where she's going with it. If you get ulted, you'll want to pop W immediately after the animation is over. Play around your team as she can only lock down one champion at a time.
Xin Zhao
Skill matchup. Xin Zhao has very strong early dueling potential with his Q knockup and his E to close gaps. Be careful when using your R at range as he can uses his R to deny all the damage, so if you want to ult him you'll have to get close to him. He falls off super hard late-game so use that to your advantage.
Zac
Very annoying to deal with. You'll want to try and invade his jungle early. You win 1v1s, but if he counter-ganks it will be quite difficult to duel. Try to get a good lead so that he doesn't become too tanky and too much of a CC monster in the late game.
Dr. Mundo
Invade him early. Mundo does not have a healthy clear early and has to back after clearing one side. Invade his opposite side and take the fight to him to set him behind further and prevent him from becoming a healing powerhouse. Make sure to dodge his Q with your E, and rush Executioner's Calling and armor penetration.
Gragas
You can pretty much avoid all of Gragas' damage with your E, and your early game is much stronger than his. AP Gragas is not that tanky and you should be able to burst it down, just watch out for the surprising amount of damage he does. If you take advantage early you will win later.
Jarvan IV
You outdamage Jarvan hard in the early game, giving you the potential to invade him. Just avoid his E+Q combo with your E and you will win every time. You can also dash out of his R if he ever uses it on you (you can also use your R to push yourself out), so there's no need to use flash. The only thing you need to watch out for is his strong early ganks, as well as his counterganks.
Kayn
Kayn's early game is much weaker compared to yours, so you can look to invade him early. Kayn is known for being a late-game monster, but as Graves you can outduel both Shadow Assassin and Rhaast with your heavy burst damage. The key thing you want to dodge is his W slow/knockup. A good thing to do is to pop your W on him AFTER he uses his ult.
Olaf
You can kite Olaf rather easily. As long as you dodge his Q you should be fine. Just don't get into melee range of him and you'll win 1v1s every time. I don't recommend invading him early, as he has a strong and fast full-clear on his side (and it tends to force you into melee range).
Rek'Sai
Rek'Sai is known for being an early game menace, but you can match her pace and duel her early. Just watch out for her early damage and try to avoid her knockup (W) whenever possible, and destroy her tunnels if you see them. Late game she falls off hard so this matchup is highly in your favor as long as you don't fall behind.
Sejuani
Sejuani is a tank jungler with low damage but a good amount of CC in her kit (which you can avoid with your E). In early 1v1s you will beat her, but watch out for her counterganks and teamfight potential later in the game. Build armor penetration early and with a good lead you will shred her.
Sylas
Invade his opposite side. Sylas has the unhealthiest clear out of all jungle champs in the game. If you keep on invading him when he's low he will never scale and you will keep outdueling him. Make sure to avoid his Q and his second E with your E, and be careful if he steals your ultimate to try and finish you off. Rush Executioner's Calling to really throw him off and deny his healing.
Trundle
You can kite Trundle very effectively, as Phase Rush's slow resistance allows you to move out of his W area. You can also dash through his E pillar. Trundle does heal with his Q so an early Executioner's Calling doesn't hurt. Keep kiting and counterjungling and you will win.
Warwick
Warwick is easy to kite, and you can keep the distance so that you don't get feared by his E. His Q healing is annoying, so once you get Executioner's Calling you should have no trouble dueling him 1v1. You can also look to dodge his R with your E so that it whiffs entirely, but if you're having trouble a QSS won't hurt in this matchup.
Ivern
Invade him whenever possible. Ivern relies on his teammates to follow up with him (since he does no damage and only has CC) and if you catch him alone you can kill him. Just make sure to dodge his Q with your E so you don't get rooted.
Twitch
Invade him whenever possible. Twitch's damage early is nothing compared to yours, and you can close the gap on him very easily. Take sweepers early to find him if he uses his Q. If you take advantage of your strong early game he cannot scale. If you're having trouble getting close you can buy RFC for extended AA range.
Twisted Fate
Twisted Fate's roaming potential allows you to play even more aggressively into the enemy jungle as he can use his R to aid you on an invade, so long as he has priority in the mid-lane.
Pantheon
Pantheon is similar to TF in roaming potential, but also brings a bit more damage to the fight.
Shen
Shen can ult you to help run down an enemy or save you from a pickle. It's always good to have a Shen on your team since he works in pretty much every team comp.
