UPDATED??!!
Please keep in mind, that this guide may not be updated for the current state of game. The build (current 7.18) should be nearly always updated, the written guide (current 7.18) wont get updated that often.

Should I build more damage or defense?
In most cases I would recommend playing on Damage, especially in the early game, simply because if you wanna be a tanky frontline fighter you shouldn't pick Lee Sin. If you play him you should try to dominate early, get map pressure and important advantages to win the game. This is normally easier with Damage Build.
If you firstpick Lee Sin and your enemys got much cc or your team needs a tank you should probably go for a tanky build and skip a damage item.
How do I know which boots I need?
It's more easy than most of you may think.
Get Mercury's Treads for MR and even more important for Tenacity. Don't forget: Tenacity doesn't affect Knockups!
Get Ninja Tabi against AD heavy comps and champions depending on AA (e.g. Vayne, Xin Zhao, Jax)
Get Boots of Swiftness as they are cheap and fast. Also they are effective against slows, even more than Mercs.
Get Ionian Boots of Lucidity of Lucidity when your build doesn't grant much cdr.
Get Mobility Boots to achieve map pressure and even more snowballing potential.

Some hints:
1. Always do your masteries before the game starts. So you are able to react to some special picks (e.g. Soraka/Lulu + Runic Armor)
2. Try what fits best for you. I got a "default" page here that should always do it's job but not more. Feel free to try something out.
3. Read the Patch Notes and adapt to changes.

In the beginning you should always make 2 autoattacks before you cast your next spell to use Flurry as efficient as possible.
Try to gank as much possible to get a use from your strong early game.
Don't forget that your Resonating Strike is an Execute. So you should deal as much damage as possible before you (re-)acitivate it. You can use this also for securing jungle buffs, Dragon or Baron Nashor if you use a combination of Sonic Wave, Smite and Resonating Strike.
If you use Dragon's Rage on someone he will be unable to move while beeing in mid-air. Because of this you should try to hit your Sonic Wave right after using Dragon's Rage - you can't miss it then.
Lee Sin is a great champion for counterjungling, because of his high mobility and burst potential. If your mid/top/bot is able pressure their lanes you could go for some counterjungling action. Be atleast sure to put some deep wards in the enemy jungle to get as much intel as possible.
Kill the crab in combination with Iron Will to heal up before ganking.
Ask your laners where wards are to know when and how to gank. Lee Sin can take some interesting ways to gank toplane and botlane, since he is able to cross walls with your Ward Jump.
Try to use your Safeguard and especially your Resonating Strike as late as possible to react to Flash or other escape skills. To properly gank it's sometimes the best way to walk up to your enemy as far as possible.

-Difficult insec/lantyr-moves
If you are good enough with Lee Sin to do a Flash/Ward Jump + Dragon's Rage (insec) you will always be dangerous.
-Teamfights:
Use your high mobility combined with Dragon's Rage to peel for your own carries or bring the enemy carries in trouble.
-Warding:
Don't forget that you have Tracker's Knife. Use this to ward important places on the map. You probably aren't such an easy target as your support.
