Threats & Synergies
Darius is fairly difficult to go up against. Don't let yourself get within range of his pull, if you can help it. Also, don't bother trading with him until you get your statikk shiv, and even then: only use your q to poke him down.
Renekton can be tricky to play against, but if you play it safe until you get your shiv then you should be able to out-trade him so long as you don't get stunned by his W. However, once you hit level 4 you don't have to worry about this, as you should have your W. Beyond that point, it should be fairly easy to trade with him or even take him out if you poke him down enough.
Nasus is a great match-up for Gangplank, as it's mostly a farm lane. Your orange also negates his slow and you can keep him from farming by poking him once you get the Statikk Shiv. After that it's easy-going :)
Jax is a tricky match-up. You really can't let him get ahead... because he's JAX for crying out loud XD. However, you can win trades easily after level 4. By this point you'll have your orange for safety and you can poke him down with your Q.
Top lane Rengar players like to drag the wave close to the bushes at the beginning of the match. Stop this by arriving in lane as soon as possible and hiding in the second bush. Poke him with your Q to back him off :) Also, be careful about trading with him too early. A misstep might put him ahead :( Typically an easy match-up for an experienced Gangplank player ;)
Gnar is fairly new in the line-up. He's probably the only champion that I'd recommend starting boots instead of Brawler's Gloves, in order to dodge his Q. Don't waste your oranges on his Q's (either form), but rather save them for when he transforms and tries to stun you. Also, you can trade easy with him by Q'ing him and then immediately backing off so he doesn't stack his W on you.
Garen is the biggest Derp of a champion if you ask me XD He's easy to avoid, especially with how mobile Gangplank is, and you can't really poke him down effectively once he gets his first few items/levels. I'd recommend trading with him as soon as possible to keep him from farming, possibly at level 2 (the extra damage from the passive E and your Grog Soaked Blade will make this easy).
Pantheon is by far Gangplank's toughest match-up. Try not to let him trade with you, and maybe even let him push the wave closer to your tower so you can farm easier and get your jungler to gank for you. If you manage to somehow get ahead of him/win lane with the help of your jungler: don't throw the lead by attempting to brawl with him and keep playing it safe until you're absolutely sure you can take him. Make sure to NEVER push the wave to him, as a gank from their jungler can be lethal.
Fiora is just about as difficult as Pantheon. She can easily out-trade with you if you get within range of her Q. Make sure to play it safe until you get the Statikk shiv, and even then be careful about poking her down, or just focus on farm still. You might not need to help of your jungler so long as you play cautious in this match-up, and don't EVER push the wave.
The spawn of Satan himself: You can orange his poison and blind, so it's not that terrible of a lane. Be careful about trading with him early, though, and try not to use up too much mana against him. Trade with him only if you're sure you can out-trade him, preferable as soon as you get Statikk Shiv.
What to focus on Early game:
Make sure to last hit as many minions as you can with your Q, as the bonus gold can really add up. Try not to trade at all early game, as your mana pool can be fairly sensitive, and you need to save it for farming or clutch oranges when you get caught out by a stun. Make sure to max your Q first as it not only makes farming/poking easier, but it also gives you more bonus gold per kill. Another great thing about Gangplank's Q ability (Parrrley) is that it applies on-hit effects. This is why Rushing a Statikk Shiv on him, especially with this build, is such a great option. The early Avarice Blade boosts the amount of bonus gold you receive and cooldown boots will make it easier to farm exclusively with your Q (the cooldown boots also help out with poking early to late game and bringing your delicious oranges back quicker).
Also, make sure to keep your eye on mid and bot lane early, as your ultimate is global and can really make a difference in snowballing other lanes :)
By the time you reach full build you should easily have the largest critical strike in the game. Check the after match statistics for proof ;)
Your enemies will cower in fear when they see you coming at them! Also, most enemies can't catch you! Laugh away the pain as you stuff your face in Oranges and rally your team with "Raise Morale"! He's a great Champion as far as being about to dish out damage, catch up to enemies (as well as get away from, if you need to) and brings tons of Support to your team in the form of AoE and Auras!
