Tanky AD Cho-Gath is viable, though the build you suggest gives you no resistances at all.
One misconception people have: Health = Tanky
That isn't exactly true. To be tanky you need armor AND magic resistance.
Thoughts on Cho:
1) Cho'Gath naturally has a health booster with his ult = allows you to get resistances early without a need for flat health to be tanky
2) Cho'Gath is melee, which means you need to be tanky to do anything in the fray, which also means that you generally should only get 1~3 offensive items, with one that can be really expensive.
3) Cho'Gath does NOT have mana problems with his passive, which means Manamune is pretty much a waste.
4) Cho'Gath has an E that deals extra magic damage - why not add on to it with something like Wit's End that gives attack speed AND on hit?

The Manamune is there to convert his max mana to AD. Im afraid i might have incorrectly explained my reasoning. I dont want this chogath to be a tank, i want him to be a survivable dps. With this in mind, i agree with some of your points (which are undoubtedly pieces of sage advice from a veteran) in that resistance is essential to survivability. Doing the math, i do however think that switching Ginsoos with Warmogs would both increase his survivability and actually give him more ad, and switching his berserkers greaves with either ninja tabby or merc treads would also give him better survivability. Excellent points, please keep them coming!

1) Use spaces.
2) I cant get the "why not build him AP Jungle" part, guess you miswrote "AD" there.
3) If you rly wanna go AD get yourself some standard metagolem build.
Merc's, Atma's + F.Mallt or Warmog. Guinsoo may possible but skip Manamune/Zerker and Madreds(Madreds only against HP heavy team).
Also TF+Heavy tank built (Some standard Yorick build for example) seems fine. But...
4)
... AD Cho'gath is not even worth a shot.
Some things are "never seen before" because they're not worth waste time on.
Except for the Health boost for Atma's you have zero synergy with any kind of AD build.
If you think that the toss + aoe silence will make up for that try AD LeBlanc...
If you wanna try sth different on him get yourself some kind of Skarner build.
Wit's End, (maybe) Nashor's Tooth or (actually dunno about that) Malady + tank(y) stuff like Rylai's,GA,Frozen Heart etc.
His E powered with some AP and AS gives you some nice cleave.

Every guide ive ever read says that he should be AP. But, I got to thinking, isnt there something else that he could be doing?
You're reading the wrong guides. In fact, two of the top Cho'Gath guides recommend bruiser builds, which is what I believe to be the best way to play him.

There are lots of situational tank items you can slip in there, but that's my core build. You'd be surprised how much DPS you can get out of

Reminds me of the time I went
Warmog's Armor x3,
Force of Nature,
Mercury's Treads, and
Atma's Impaler. xDDD

Rageblade isn't that bad on cho at all.
Bloodrazor is great.
You really need wit's end.
IF you're ahead, you can just build super aggro:

Tri lane for life.
Guinsoos sucks on cho, but, berz greave's madreds wits triforce etc are all fine and pretty strong ^_^

Only because it's an all in item.
If you are playing hyper aggressive glass cannon Cho, Rageblade is one of the best items in the game.
I really prefer a tankier item like Triforce + GA instead of ionic spark+rageblade :s
Tri lane for life.
