Introduction
I welcome you to my build featuring Olaf.
This guide should give you an idea on how to play Olaf. Furthermore, it'll handle masteries,items,skills etc.
Enjoy reading my build.
I accept any criticism and I am willing to add further things according to your feedback.
I usually go for defense and health runes. Though, you may also go for damage.
Health Runes: Tough It Out additional damage is based on his health. Therefore, you'll get some more damage with Tough It Out. Besides, survivability is always good, eh?
Magic Resistance: You may choose magic resistance runes, but I usually prefer armor runes. You can ofcourse mix up armor and magic resistance runes. Another idea, might exchanging all armor runes with magic resistance runes. Why? Because Atma's Impaler is going to grant you ~80 defense later on.
Defense Runes: I like them. Especially against ADs like Warwick Vayne etc. It nerfs their damage atleast a bit.
I recommend runes similar to this:

I go for 21/0/9 masteries. As Olaf you may also go for 21/9/0 or 9/21/0 masteries.
Deadliness
Gives you additional critical damage. Combined with Phantom Dancer it is a good mastery. Though, as Olaf you shouldn't be picking critical strike runes.Cripple
The enemys have less armor for a short period of time and are slowed 0,5 seconds longer. Since Olaf does not have any stun (just the slow Undertow gives him) I recommend picking Exhaust.Alacrity
You'll gain some attack speed. Always a good choice for Olaf I guess.Sunder
Penetrates some armor -> more damage -> good.Brute Force

Let's your critical strikes do more damage.Havoc
5% more damage.
Great item to survive in the first minutes of the game and/or get first blood. 100 additional health and also 10 attack damage!
Movement + Attackspeed. I usually go for these boots. However, depending on your enemy champion's you may also go for Mercury's Treads. I build this item first.
Additional health for survivability and more damage for your Tough It Out. This is my second item I go for.
Forzen Mallet In my opinion, this item belongs to Olaf core build. This item is just perfect for him. Health + damage + slow for chasing. Third item I go for.
Attack Speed + Movement Speed + Critical Strike. Let's you do more damage in a shorter period of time and move faster. Great item. I build Zeal as fourth item.
Stacked it gives you about 1400 health. This let's you survive pretty long and when using Ghost and Ragnarok you should not die. Furthermore, Tough It Out does more damage. So overall, a must item for Olaf. My fifth pick is Warmog's Armor.
Due to your high amount of health points, this is a great item to make use of it. Additional defense, critical strike chance and damage. When building this, you should get about 80 additional damage. With Tough It Out you should have enough damage to not need any further damage item. My sixth pick after Warmog's Armor.
15% movement speed, 55% attack speed and 30% critical chance. Great item for doing good damage. I upgrade Zeal to Phantom Dancer as my seventh pick.
Tanky items against heavy casters.
Great item to do a lot of damage.
100 attack damage and 25% lifesteal. Though you already do enough damage. This let's you rape everything in 1v1 and do EVEN MORE damage :D.
Even more health + damage due to Tough It Out and Atma's Impaler.
More critical chance, faster movement and more attack speed. I don't recommend getting another Phantom Dancer. However, this is a good item.
Great item for enemys like Malzahar. This item let's you escape from his ultimate. However, when using Ragnarok well, you don't really need this.
With proper teammates, you shouldn't die at all with this item.
Great item against heavy AD-Chars like Warwick, Tryndamere or Vayne.

1% less health = 1% more attack speed. Pretty good for pushing towers after a gank and generally good :P. It is your passive.
Let's you slow your enemys. This is a good skill for chasing. I also recommend throwing your axe into the bushes, to see whether enemys are hidding in there.
Additional damage based upon your health and lifesteal. Make sure to always use this in a 1v1.
Due to this skill doing true damage, you can simply do 340 damage not minding the enemy armor. This is extremely effective against squishy champions but also does proper damage on tanks.
Great to skill to escape or just survive in a fight. You cannot be stunned, slowed or anything else. Make sure you use this BEFORE starting the fight so you won't get stunned or anything. Combined with Ghost you can easily escape any gank.
Summoner Spells I use:
A great skill to chase but also escape any gank situation. I highly recommend this summoner spell.
Since the only skill to atleast somehow chase is Undertow (only slows though) I also recommend this for chasing abilitys.
Other acceptable spells:
You can use this if your enemys usually escape with 50 health points :P
Survivability is always good.
Skills you shouldn't use:
It may let you escape in some situations, but Ghost combined with Ragnarok ftw.
Due to Ragnarok you don't need this.
Unless you want to go jungle, you shouldn't be picking this skill. You can even jungle w/o it so...
