Lane, outfarm him.
Anyone with strong sustain as well is a great pick.
Cho'Gath comes to mind as something that's trounced me a lot.
Olaf works well also but only if you actually fight the ghouls and build wriggles/armor.
Teamfights, use the "champion only" button on your keyboard to avoid targeting the ghouls. It's ~ by default on QWERTY keyboards. No idea what it is on AZERTY keyboards. I've remapped it to spacebar for easy access.
Think of his ult like a 10 second GA. Focus them down once then do it again. Or, kill him and the ghost goes away.

Sig courtesy of GrandmasterD. Go get your own sig from them. :D

Basically outsistain him and let him push a bit, so he can be ganked hard.
Kayle and Fiora hurt him loads if you go into his face early. Rumble can do pretty well if you get an early gank (and if rumble picks the kill) so you can get early hextech. He will push the lane, but ghould harass can be defended (points in w) and healed back (although Yorick has more teamfight relevance lategame due to ulti)
Wasn't Trundle also a good pick versus Yorick?

In lane he is pretty much irremovable brick if played well, as long as he keeps his lane warded he will be fine.
In team fights he will just spam all ghouls making it impossible to click champions, and use his ult on the AD Carry for an insane and uncontrollable amount of damage.
How could anyone win from a
