Stomp him on the early game and the lane is yours. Your heal is bigger than his, try to always be up health than his.

Easy easy, hit him before he gets level 6 and the lane is yours, even after the level 6, if you got a good farm the lane will also be yours

It's kinda resistant after the Early game, try to harass her before reach the midgame

Avoid get his stacks and harass him when he get into cooldowns and you might not have too much trouble.
Lissandra
She's tooo poker, so try to help in another lane instead, if you do and be able to back quickly to your lane, it will be way easier to turn your lane on your favor.
Jayce
Against him is 'kinda' hard. He will try poke you all the time, you will need to play safe and before your minions, try to push him into the tower if he try to hit you closer to it as melee form.
Gnar
Just be careful with his mega form, avoid his pokes and he will be easy, since he's squishy as mini.
Rek'Sai
she's kinda annoying with the Flash + W combo, try to avoid this quickly then kick her into your tower. yeah!
Nasus
Try to get on a 1v1 on the lane with him, don't let him farm under his tower or farm on the lane, but let his minions be as strong as yours, so he can't farm under his tower and neither on the lane. Farm denying on Nasus is equal win.
Xin Zhao
When he "E"s you, throw him up and under your tower if it possible, or over your minion wave on early game, and you win

Flash : obviously flash on Alistar would help in anything, even strategically. You can flash behind the enemy champion and quickly Headbutt him onto the tower, if it is an Irelia, for example, and she uses Q on you to escape you can Flash onto your own tower to bring her more on your tower xD
Ignite : use it if someone already picked Teleport in some lane.
Teleport : standard top laner summoner spell, the best one in my opinion to any tanky top laner, it allows you to support in any lane when you use it wisely.

Doran's Ring : You can get it if you need mana regen and health, mostly used.
Crystalline Flask : if you got high mana usage on the start, good against annoying poking champions, either ranged or with fast escape.
Doran's Blade : for more damage on the start, not that recommended if you got inhibited to farm
Cloth Armor(against AD) : Pick it against Fighter/Assassin on top, as Jax, Irelia, Pantheon, Tryndamere [...] If you got this one you can get x5 Health Potions
The Core items was redone, adding the focusing on build Rod of Ages first of all, then you can decide what else you want to build
In case of dealing less AP damage or having a tank on the enemy team that you want to deal more damage on it, the Sorcerer's Shoes is highly recommended.
In case you're needing early Cooldown Reduction, Ionian Boots of Lucidity is recommended too, later you can combine with other items and avoid using ones and being able to use other ones.
Catalyst the Protector
Catalyst the Protector : after that buying, you can run for your Rod of Ages, or, in case you don't have enough money to rush it, go for Blasting Wand. After the Rod, you just need to build more damage...
Trinity Force : ... As trinity force, your main core damage item that you will combo with Infinity Edge after, you don't need to rush Infinity Edge thought but having your Trinity Force guarantee you enough AP damage on the start.
Infinity Edge : for the main build, it will be your main core damage item to combo with the Trinity Force, after these three items dude, you can do whatever you want.
Rod of Ages : Your core item to mana, ability power and health on the early start, the other health item you will have later will be on the late game, Spirit Visage.
Trinity Force : one of your core items to you to be able to have everything you need on the early start. Start building this one after Rod of Ages, in case you need more resistance instead, do it later after a early defensive item as Glacial Shroud or Hexdrinker.
Frozen Heart : to give you armor, mana and cooldown reduction, we know that the CC applied by it isn't that big, but the mana, armor and 20% of CdR it gives to you, turn this item one of the cores on this defensive build, sometimes i build it before Trinity Force be complete.
Infinity Edge : You don't need to have infinity edge that early compared to the defensive item if you already have both Trinity Force and Rod of Ages, trinity force is recommended to be done after you already have Trinity Force.
Spirit Visage : your last item, this item can be replaced by any other item you want, as Maw of Malmortius or any other, defensive or offensive.
Sunfire Aegis : offensively giving you more aerial damage that will combo with your passive, even healing yourself with the Triumphant Roar will kill the surrounding units.
Abyssal Mask : for the combination with your Sorcerer's Shoes, this item will reduce enemy's magic resist, letting you deal better damage with the W + Q combo before goes to the basic attack, this item can be replaced by any other item you want, as Maw of Malmortius or any other, defensive or offensive.
On this build we will only be diving the Trinity Force in three, now that we have Black Cleaver being built by the Phage we have three items that can do the trinity force. Dividing the Trinity Force in three will increase the effects of it, giving you more health, damage, attack speed, critical strike, will give you armor now too and a different spellblade passive provided by the Iceborn Gauntlet that will help you on farm
Rod of Ages : same things as the previous builds, you will need this item to the early sustain, mana and ability power.
Spirit Visage : Spirit visage increases your healing on the Triumphant Roar, health regen. and magic resist will also be increased.
Summary
Summary
On this build, Alistar will basically be the hybrid tank that can't be stopped, the early game will be based on the AP damage on the Headbutt + Pulverize combo, the late came is when you will build the AD items, as Trinity Force and Infinity Edge, they will be your core Attack Damage items.
Always try to get your enemy under your tower on the early game, if you're playing safe this will also help you a bunch. Having fun and good luck on your games!
