This is just a handy guide based on the win rate data at http://lolalytics.com/champion/Malphite/Support/. I last updated it in patch 6.23.

Malphite support has a lot of flexibility. Both tanky and AP are pretty good, although AP is a bit better in general. Vary your build based on what your team needs. For example, if your team has a lot of mages, Abyssal will amplify their damage and Void staff will help you cut through extra enemy MR. If they have an all AD team comp, thornmail is great. You can use the "Items by Win Rate" section to inform your decisions.

Summoners:
Exhaust is basically just as good as ignite, so choose your summoner spells based on the matchup or what you feel comfortable with. I think AP Malphite would prefer to go ignite, and tank Malphite would prefer Exhaust.
