Mundo is one of the easiest matchups for Garen and a free lane. All you have to do is to stand behind minions so he won't be able to harass with his cleaver throw. He is not able to do much to without it. Trade aggresively with Q + E or E + Q whenever he comes close but try to avoid pushing minion wave too much. You should be able to outrade him every time. Buy executioner's calling after berserkers to negate his healing. Respect his ult and don't fight him on low health post 6. Cleaver after triforce is recommended as he will become beast of a tank later on.
Darius
Difficulty of this matchup is primarily based on experience of Darius you are facing and your personal experience with Garen. In higher elos this champion is a very strong permaban contender. In lower elos Darius freshmans missplay oftenly and their mistakes are easily exploitable.
In early levels Darius is pretty much going to demolish you everytime you will try trade so you should avoid engaging pre-6 unless he forces the trade upon you. When it happens you either want to Q + E away or E + Q and run away. Give up lane priority and avoid his abilities as much as possible. It's not worth to risk getting hit by Q just to get 1cs. It's not worth to risk feeding him by being overconfident as he snowballs easily even from 1 kill. Stay safe and farm what you can. On your first back buy berserker's greaves or boots + phage. When you have your boots, level 6 and ignite is the time when you are becoming a danger to him. Proceed with tactic of avoiding trades and E + Q away when he gets too close. Whenever he Q's TRY TO STAY ON TOP OF HIM - only when you get hit by edge of his Q it will heal him.
Play to your strengths and his weaknesses - he likes long trades and has no sustain besides his Q, you like short trades and have great passive sustain. If you damage him without getting hit by the Q you just won the trade - he has no other means of getting his health back. When he is below 50% hp and you are not behind you can all in with E + Q + R and ignite.
The higher your level is and more items you buy the more of a threat to him you will become. Be more patient, safer and you will eventually win.
Sett
Sett is one of those tough early lane bullies you will eventually outscale and destroy in the mid game. Subsequently your main goal in this lane is to survive, don't feed and farm (play Nasus simulator).
Early trading consists mainly of you avoiding him like a little scared girl and Q + run away when Sett gets too close and you will have enough time to get away without being blasted by his W. You can block it with your W. Try to step to the sides of his W as the center of this ability deals true damage and hurts poor Garen greatly. Remember that on early levels Sett's passive health regen is much better than Garen's - he will regen faster than you.
When you have your berserker's, stinger and phage is about the time when you can whoop his ass. Start spinning on him with E + Q and run away. Have in mind that it is quite easy to avoid his W when you spin on top of him just by clicking around close to Sett. When he pops his W and your E is finished you need to run away as he will get very large shield and easily block all of your damage. If you got away and did not get damaged by his W you just won the trade. Repeat this process twice or thrice and send his ass with R back to the summoner's platform. Remember his W can block your R so be careful with timing of your ult.
Mordekaiser
Tough matchup but its winnable. Avoid his Q and E as much as possible even when it means losing CS. If he misses both of those don't be afraid to be aggressive - E + Q is a good way to trade. Rushing wit's end in this matchup is a good idea as it will give you enough MR and damage to trade with him equally. Otherwise proceed with standard Berserkers > Triforce build. Don't get close to him post 6 as he will ult and whoop your buttocks. If you bait his ult near your tower it will be a wasted R for him as enemy towers damage Morde even inside his ult. Similar to Sett after you get berserkers + trinity you will be a bigger threat to him than he is to you (unless you fed him kills during laning), but nonetheless you should still respect his ult. Against very aggresive Morde players you should buy some sort of magic resist on your first back (like spectres cowl) or rush Wit's End as it is an amazing item against iron revenant.
Renekton
Matchup similar to Sett but unlike Sett he is useless later if he doesn't snowball during laning. Post 3 you should be able to outrade him everytime your E hits all of your spins and Q him when his armour is shredded. Renekton prefers even shorter trades than Garen so avoid fighting him if you don't plan on full E + Q combo as he will easily heal with his aoe slash and dash away.
If you don't feed him early and keep even in cs you will absolutely obliterate this angry crocodile in the mid game.
Vayne
Not much to say here, Vayne is a perfect counter pick to Garen. Permaban or dodge. Otherwise pick Predator + second wind in the secondaries, stay in the bushes all the time and farm what you can. She has zero waveclear so if you push wave with your E there is a chance she will be more interested with salvaging CS than demolishing you. Buy boots on your first back. Bait out her knockback before engaging with predator and run her down with it after. But honestly, just dodge. Whatever you try most likely you will loose regardless.
Lucian
Same as Vayne, ban or dodge. Otherwise predator + second wind and run him down when he gets close to your tower. But most likely in this matchup only thing that is going to be run down will be you.
Quinn
Same as Vayne and Lucian. Quinn by nature of her kit is a perfect counter pick to many melee top laners and Garen is among them. Ban or dodge, fortunately for you she is not a popular pick. If you however want to fight her I recommend using my predator rune set and use same tactics as you would against Vayne (bait her E and run her down with predator + q).
Yasuo
If you beat him to lvl 2 and don't eat too much poke before lvl 3 this matchup becomes a free lane. Respect his damage and tornado harass early and you will demolish him post 6. Buy berserkers on your first back, following with phage or stinger. Don't use E everytime he will dash on top of you in the minion wave as he can easily dash back with minimal damage taken. It's better to Q him when he gets close and then chase him with E. Respect his 0/10 powerspike as it will unlock his secret FF powers.
Urgot
Coming soon. tl;dr - if you don't demolish him pre - 9 this matchup becomes unwinnable. Be aggresive but never engage if his abilities are up. Urgot is a broken champ.
Azir
Free elo. Beat him to lvl 2 and bully him hard with Q + E whenever he gets too close. His miserable damage and pitiful waveclear makes him a non-threat in the laning phase. He has no proper disengage, is extremaly squishy and after your first back boots purchase lane is pretty much yours. Unfortunately for Garen mid players noone picks Azir.
Kayle
If you take predator you may win, if you won't most likely you will loose. More coming soon.

Best companion you may get, fed Garen with Yuumi on his back is an unstoppable carry machine.
Darius
Darius top with Garen mid is a ridiculously overpowered duo stomping everything in their way.
