OF coarse you can do many combinations ecept from those I showed(the examples builds) at every build group (ad, ap or tank).

when should I build each one?

Many players don't know when they should play ad ap or tank. I prefer ad and i think that ad must be the main build, namely you should go for ad build except the reasons below:
when your team hasn't an ap champion, so then you play ap,
when your team hasn't tank, then you play tank.

why i prefer ad?

When you play ad you have damage and you don't fear that an enemy can one-shot you.You can challenge everyone at a 1vs1 battle and be winner, actually you can even pull of 2vs1 easily because the ad build gives you and some tankines so it is very usefull. You can engane with your ulti at teamfights and caryy your team.
