Usually you can win long trades but be careful of charging your q while she has her e up.

You have some kill pressure early on him, sit in your wave so he can't q you over and over again.
Fiora
Fiora can really run you down if you misplay. Change up the timing of your q to avoid getting parried. A lot of fiora's parry around when you first get the knockup on your q so you can continue charging while they parry and get off a fully charged q. If you don't build bramble she will win fights guaranteed late.
Gangplank
Avoid his barrels and his passive. Try to last hit his barrels if you have the opportunity.
Garen
Don't let him get in range and e after his q so he can't cleanse the slow.
Gnar
Poke him down with e q, if he uses his e you can ult him. Be aware of walls or getting ulted into turret.
Illaoi
If you can't dodge her e you will lose. Don't fight her in her r.
Irelia
Don't take extended trades, try to poke her when she dashes to minions.
Jax
Don't give him space to run you down. Try to q him before he can q and if you know he is going to all in wait for his e q before using abilities.
Jayce
Be careful early, but you should be able to outscale him fairly easily. Don't let him knock you out of your q and stay behind minions.
Kayle
She's fairly weak early so just e into q to poke her down.
Kennen
Be careful early and try to bait his e with your q as it has a long cd and he loses a lot of mobility without it.
Kled
Don't give him room to run you down. Keep him out of melee range especially when he is dismounted with his q.
Malphite
Go for e into q and don't bother auto attacking him when he uses his e. Just farm and outscale him.
Maokai
Don't charge your q when he has w or is in range for q. Just farm and outscale him.
Mordekaiser
Don't charge q while he has e, keep him out of range and don't let him stack his passive.
Nasus
Stay out of melee range and do your best to scale while denying farm and poking.
Ornn
Don't let him w auto, keep in mind you can ult through his second ult cast.
Pantheon
Try not to trade, don't charge q while he has w or e. Focus on outscaling.
Poppy
Try to avoid charging q while she has e, focus on scaling.
Quinn
Try to interrupt her dash with r, play safe. Focus on scaling.
Renekton
Don't let him get in melee range, his empowered w destroys shields so don't waste it. Focus on scaling.
Riven
Try to keep distance to force her to blow abilities to engage. Look to interrupt her abilities with r or q. If you don't build bramble she will win fights late guaranteed.
Rumble
Care early and just e q. Stay in minions to avoid poke and don't get in range of flames.
Ryze
Depends on the ryze but same rules apply, e into q and don't let him q you in the open. Focus on scaling so you have a chance late.
Sett
Don't give him room to run you down. Avoid getting in range of melee and only go for q if he doesn't have e. Focus on scaling.
Shen
His q shreds especially early so keep out of melee range. Look to q after he dashes or if you think you can interrupt.
Singed
Don't chase him, care for his fling into turret and don't give him room to run you down if he is ahead.
Teemo
E into q and repeat. After 6 you can go for r after e.
Tryndamere
Avoid melee, don't give him range to run you down and avoid charging q when his e is up. E and run.
Urgot
Avoid close range and interrupt his e with your q after he starts the dash.
Vayne
Cheese with fog of war, you can go for e into q or r after she uses her q.
Vladimir
Look to all in after he uses his pool or bait it with your q while he is high hp so he wastes it. Don't let him q you when he has a red bar. Care for his flash e r q combo. If you are remotely low and he start's charging his e while walking towards you with his red bar be careful.
Wukong
You are probably wasting your q if you go for it while he has w or e up. Avoid melee.
Yasuo
Don't let him run you down on your minion wave, don't q in your minion wave, and don't charge q when he has r. You can r through his tornado.
Yorick
Don't let him wall you and avoid his e as much as possible. Farm ghouls for bonus hp.
Gwen
Haven't really played into her much but she has some major dueling potential and her w can bug your q out of existence so be careful.
Viego
Viego has some crazy dueling potential and you'll prob want to rush bramble but you should be able to poke him down with e into q from your wave to avoid his stun.

Why play Sion?
I personally enjoy Sion a lot, he's a fairly straightforward champion but not completely braindead. Learning how to set yourself up for a high-charge q or zone enemies off of your backline is really fun and landing a max range ult after drifting through the jungle always feels fantastic. Sion can function great as a tank but his absurd ad scaling and synergy with health scaling items such as Titanic and Sterak's means he can also spec into more damage-oriented builds while still being relatively tanky. The ability to switch up your playstyle on Sion and still be relevant keeps him from getting boring and is probably one of the main reasons I still play him.
